One Pan Wonder

We love making meals that are easy, quick, and require minimum clean up on days we’re super busy with school. This recipe is so simple!


2 boneless chicken breasts (marinate in 1 tablespoon of balsamic dressing a couple of hours before baking)
1-2 medium sweet potatoes, cubed
1 cup of brussels sprouts
2 tablespoons of balsamic vinegar dressing
1/2 teaspoon olive oil
1/2 teaspoon parsley
1/2 teaspoon thyme
non-stick cooking spray


1. Pre-heat oven to 400 and spray a baking dish with non-stick cooking spray.
2. Toss your cubed sweet potatoes with the olive oil, parsley, and thyme. Then, toss your brussels sprouts with 1 tablespoon of balsamic dressing and place the sweet potatoes and brussels sprouts in the bottom of the baking dish.
3. Lay your boneless chicken breast on top of the vegetables and cover with foil.
4. Bake for 45-60 minutes depending on the size of your chicken breasts (we found that 50 minutes was perfect!)

This is a picture before we placed the pan in the oven. We were so hungry that we ate before we realized that we never took a picture of the finished product! But we promise it was delicious! I hope next time you need a quick, healthy, and easy meal you think of this!
