What We Ate Wednesday Week Two

Having the opportunity to link up with WIAW over on http://www.peasandcrayons.com blog is such a great opportunity for us. Last Wednesday was the first week we participated in the link-up and had over 150 viewers throughout the day! We were so excited to see those stats. So of course we had to link up again this week. The WIAW theme for February is love your veggies. We love our veggies and yesterday’s meals were filled with them! Some of these meals are from our meal prep earlier this week! We only had to make a few additional meals to mix things up.

Breakfast:

Quick oats mixed together with cinnamon, mashed banana, and a little vanilla soy milk. We topped our oatmeal this morning with 1/4 sliced banana, 1 tsp chai seeds, 1 tbsp harvest fruit granola from our nature box last month, and homemade sunbutter!

Every few days we treat ourselves to green mountain coffee at school. Today was one of those days! We love flavored coffee. Their holiday special right now is golden french toast. It’s like drinking cinnamon toast crunch cereal. Our school’s coffee bar has such a nice set up. They recently redid it to make getting coffee and putting your milk/sugar/etc. in easier to access with a ton of people trying to do it at the same time.

Lunch:

This was quickly heated up in the microwave when lunch time rolled around. The morning was spent doing school work in front of the fireplace.

Minestrone soup was paired with a peach Chobani and carrot slices. On the side was a cup of hot green mango tea. A meal isn’t complete for us without some sort of vegetable. We try to make sure we have one at every meal to have a well balanced plate!

Afternoon snack :
Green monster smoothie!

Tuesdays and Thursdays are also our unofficial smoothie days. When Dev comes home from teaching observations we always want an afternoon snack. For us, the greener the smoothie the better. We always try to see how green we can make them. Our smoothie today had the following: 1 cup spinach, 1/2 cup frozen strawberries, 1 cup of apple juice, 1 frozen banana, 1 clementine, and 2 tbsp better than peanut butter. Divided into two bowls and topped with cinnamon pecan special K. Enjoyed with the newest style magazine.

Dinner:

Tonight we used our last squash in our pantry. It was such a sad moment. But it does give us an excuse to go shopping for more now. They are delicious sliced in half and roasted in the oven. We roasted our little squash for 30 minutes at 400 degrees. The best part of our whole day was we opened it to discover it was a spaghetti squash in disguise! We paired this with homemade kidney bean burgers smeared with lentil hummus (if you mix hummus with water it turns into sauce like consistency) and caramelized onions all topped on a bed of baby spinach. Green beans are looking good on the side. See how easy it is to add in vegetables? Spinach, and green beans are easy to find but I bet you didn’t know the bean burger holds even more! (Mushrooms, onions, and peppers)

After dinner we were off to the library. Study hours sent us to campus from 7:00-9:30pm. After we headed to our Phi Sigma meeting! It was a busy night for us. We are so excited because we got to list our top picks for bigs! We cannot wait for big little reveal night.

But, no matter how busy our day is we always take time before we go to sleep to relax, get ready for tomorrow, and enjoy a hot cup of tea. Tonight’s pick: Organic Vanilla Chai Tea.
Evening Snack:

Cottage cheese, strawberry sugar free jam, strawberries, and multigrain toast cubed on top. A bowl full of flavor.

On another topic, we would love to share something special our sorority sisters are doing over these next few weeks. Each of us received a small slip of paper and was asked to write down an act of kindness we could do for another sister. Some ideas included buying your sister a healthy afternoon snack, getting a sister a coffee, or writing your sister a handwritten note telling her what you love about her. Each sister puts her slip into a box and the box is passed between the sisters. When a sister receives the box, she randomly picks out a slip and does what it says. She also gives the box to the person she does the act of kindness to. Then they randomly pick a slip out of the box and the random acts of kindness continue until each sister gets to pull a slip out of the box.

We think this activity can be applied to each of our lives in different ways. This would work within a family, a workplace, or a group of friends. We feel our society is so wrapped up in technology, social networking sites, and our busy lives that sometimes we forget how a simple act of kindness can really change someone’s entire day for the better. We don’t all have valentines this year, but we can share our love with others in many different ways! This is a great example we both loved so much we couldn’t help but share with others. So today we inspire you to do something kind for someone else. Share your love with the world.

    Love all of your different bowls! The one you used for breakfast was so cute. And I’ve never had a square bowl… But that seems to make eating just a little more fun! 🙂

      Thank you! They are from Anthropology. That store has so many cute kitchen accessories! Our square ones are from Target. They have a ton of inexpensive options as well! We always have fun deciding which bowl to use for our next meal. Unique and square bowls make the food that is in them so much better! 🙂
