Weird Food That Ends Up on our Plates

This is one of our craziest combinations to date. We were hesitant to even share this one with bloggers because it’s that out of the box. But then we decided this is our blog where even the CRAZIEST recipes deserve their spot light. Welcome to the table roasted chickpeas + feta + grits.

Grits are weirdly good. Since we love our oatmeal so much we had to give them a try. They also had to be savory, it was dinner and all you know. So here’s how you can put your own bowl of craziness together. In all hopes you will love this combination as much as we did.

This was one of those recipes that isn’t really actually a recipe. You kind of just toss a little bit of everything on these chickpeas and roast them in the oven. We took a cup of chickpeas, drained and rinsed and tossed them with equal parts of olive oil, honey, and lemon juice. We also tossed them with a pinch of salt and pepper and roasted them at 400 for 30 minutes. After 30 minutes they were the perfect crunchy texture to top a steaming bowl of grits made water and a splash of almond milk. A dash of feta was the perfect finishing touch for this bowl!

When we first thought of this combination we were a little concerned at how it would taste overall but it was delicious! Grits and oatmeal are such great base starters for meals. You can make them savory or sweet by the ingredients you pile on top. Sometimes on a cold winter night a warm bowl of grits is the perfect comfort food.     This is a really creative idea!

    Well… I haven’t had oatmeal in forever, but would you believe that there was a time that I thought anything on oatmeal was weird? Seriously, whenever I am able to eat oatmeal again, my first bowl most likely will be plain. 🙂

      Oatmeal is one of those foods we just always come back too! Even plain it is yummy. We use to eat it pretty basic but now we love to pile on toppings! 🙂

      I think the texture contrast was one of the things that made it even better! So glad we discovered this link up. We love hearing about weird, but good eats 🙂
