Oat Bran Crusted Fish

Happy Thursday everyone! We are a little sad that it is ALREADY Thursday. Spring break is flying by and we are no where near ready to start school work again. We really should not complain though because the next couple of days are filled with fun plans! Our plans for today include a hair appointment (going blonder), baking muffins, and making maple sesame toasted almonds! If everything turns out right we’ll be sure to share pictures with you guys!

Lately we’ve been in a fish rut. We picked up some pollock fillets at the grocery store but every time we bake them we feel like they have NO flavor. It’s not like we are not seasoning them either, we’ve tried lots of different combinations but they still taste bland. Yesterday afternoon we came across the most brilliant idea EVER. OAT BRAN CRUSTED FISH!


2 pollock fillets
2 tablespoons of Quaker oat bran
A pinch of each of the following spices: parsley, black pepper, and garlic powder


1. Preheat the oven to 400 degrees.
2. Mix the oat bran and spices together. Coat each fillet with breading.
3. Spray a baking pan with cooking spray and bake fillets for 20 minutes. For the last 2 minutes turn the oven to broil and carefully watch to make sure you don’t end up with black burnt fish!
4. Enjoy!


After this successful recipe we will NEVER eat bland fish ever again.
