What We Ate Wednesday

Today we are linking up with Peas and Crayons (http://www.peasandcrayons.com/) and going green to match this months theme for What I Ate Wednesday. Of course our eats of today are filled with greens! Kale and spinach are two of our favorite greens at the moment. We always to keep a bag of each in our fridge to grab for quick and healthy meals throughout the week.

Breakfast is a spinoff inspired by our usual banana whipped oatmeal. Todays bowl of oats is made with 1/4 cup oats as well as a tablespoon of Bob’s Red Mill hot cereal. We cooked this combo on the stovetop with 1/3 cup almond milk. 2/3 cup of water, 1/2 banana, 1/4 teaspoon of vanilla extract and 1 teaspoon of chai seeds. Near the end of cooking we mixed in 1/4 cup of cottage cheese. We topped this bowl of goodness with strawberries, Nature Box Harvest fruit granola, and Trader Joe’s Sun Butter!

We love that nature box granola’s are always so fresh. If you’ve never tried Nature Box before we would totally recommend it. Although we do not have a monthly subscription, we occasionally sign up just to be surprised by a box full of wonderful healthy snacks!!

Tuesday’s are perfect for yummy salad combinations. Although this week is crazy busy for us we managed to use some of our leftovers from the weekend to assemble these healthy salads in no time. Spinach salad topped with carrots, Trader Joe’s roasted red pepper hummus, a small clementine, homemade sun dried tomato meatballs, buckwheat groats, and a slice of bread as homemade crutons!

All afternoon we sipped on this new tea we were given by a friend to try. Another Trader Joe’s obsession to add to the list!

The first time we read about No Bull Burgers we knew we would love them. We found out that you can order them online and we were super excited! We added them to our cart and proceeded to checkout. We were a little bummed when we found out it would cost $20 to ship $10 worth of burgers! NOT OKAY! So we whipped up a batch of our (Lentil Burgers) instead. Someday we will get our hands on No Bull Burgers, until then these will have to do. Our lentil burger was eaten on a whole wheat sandwich thin and topped with with gouda cheese, tomatoes, spinach, and mustard. We served these with a side of steamed asparagus.

Finally after a late meeting we ended our day with this yogurt bowl. Mango Greek yogurt, natures sprinkles, and the end pieces of our trader joe’s bread (Greek yogurt + toasted bread = amazing combo)

This is our final week of the new member process for Phi Sigma Sigma. Friday night is initiation and then we will finally be sisters! This is definitely motivating us to get through this week. We are so excited!

    Certainly the allure of spring break in a couple weeks 🙂 And St. Patty’s festivities (aka green food for me) on Sunday!
