What We Ate Week 15

Thank you all for your kind words yesterday, they were greatly appreciated. As much as yesterday was emotionally exhausting, we managed to make it through. Someone was watching out for us, as yesterday was Dutchmen Day.

Dutchmen Day at Lebanon Valley College is basically a day where classes are cancelled and the campus is taken over by music, inflatables, games, movies, a bonfire, and tons of other similar events. The main catch is that Dutchmen Day is a surprise. So you really only find out that morning. We had our suspicions, and a few rumors led us to believe that Dutchmen Day would be yesterday. Having a day off from class was much needed and definitely appreciated. Although we still both ending up having to work later in the day it was nice to head over to campus and hang out with a few of our friends and enjoy some free food and sunshine!

Waking up to cancelled classes = relaxing breakfast OUTSIDE! We are loving this weather. Breakfast was whipped banana oats made with egg whites. One was in an almost empty might maple peanut butter jar and the other was in an almost empty sun butter jar. Topped with toasted coconut and buckwheat groats and washed down with some extra strong coffee. We decided today that almost empty peanut butter jars are the best way to eat oatmeal. Hands down. Plus you save yourself a bowl to wash!

all gone 😦


We happened to be on campus around lunch time. You know our feelings about LVC’s food. Today was actually okay. Dutchmen Day always means a BBQ on the academic quad but LVC always manages to have some type of vegetarian option. They had black bean burgers and fruit salad so we are happy campers.


Both of us have been working a lot more lately but we cannot complain. We’d rather be busy than sit around and do nothing. Our snack before work today was a Fage Peach greek yogurt topped with blueberry granola! We are seriously obsessed with greek yogurt lately…and granola. It is just so freakin’ good.


Devon worked late tonight so Kayla had a solo dinner date outside on the patio. Eating alone is no fun but sitting outside definitely made up for it. Can you tell we love taking advantage of warm weather and eating outside? We are soooooo happy it is officially outdoor eating season. Dinner was homemade soup with a side of Almond Nut-Thin crackers. This soup was so simple to make. We will be sharing the recipe shortly!

Finally, we ended the night with smoothies! This smoothie was made with 1 cup of almond milk, 1/2 orange, a frozen banana, a handful of spinach and some frozen peaches. Topped with almonds and Kashi Go Lean Crunch. Yum!

    Ugh, I wish I was enjoying awesome weather– our spring over here in Chicago is horrible! We’ve had a couple of teaser days but it’s rainy gross and windy and they are saying possible snow on Friday 😦

    I had overnight oat in TJs sunbutter jar this morning. Hit the spot perfectly.

      This soup recipe is super easy and we are excited to share it with you shortly! Oatmeal in sun butter jars are the BEST and may be the only good thing about running out of sun butter πŸ˜‰

    I love almond nut-thin crackers, they are the perfect addition to a meal or snack. I’m glad you were able to enjoy a somewhat relaxed morning without classes!
