Coconut Black Bean Dip

Kath and her blog Kath Eats never fails to let us down. Every single recipe we’ve ever tried always manages to exceed our expectations. She seriously rocks and this recipe we’re about to share with you was found on her blog. We would have never thought to pair these flavors together before her. Like we said, she rocks.

Coconut Black Bean Dip

Ingredients:
1 can of black beans, drained and rinsed
1/3 cup of unsweetened shredded coconut
2 tablespoons of light cream cheese
1 tablespoon of maple syrup
1/4 cup of pecan halves (almonds would work too)

Directions:
1. Combine all ingredients except nuts in blender or food processor and mix until combined.
2. Pulse in nuts.

We choose to add this dip to our salads. It would also be amazing as a snack paired with some vegetables or whole grain crackers. It was so awesome we plan on making it again next week! Two thumbs up for Kath.

Plus it’s purple. Who doesn’t love eating purple food?
