Yogurt Cilantro Hummus

Last week we really were in the mood for some hummus but we did not have any at our house. After contemplating running to the store we figured it couldn’t be too hard to make our own… right? It’s basically chickpeas, spices, some olive oil or tahini, and whatever else you desire.

So, we opened the fridge. And what did we find? We spied some plain yogurt that needed to be used, a whole bunch of limes, and a lot of iced coffee. And after that, cilantro lime hummus was created. Without the coffee of course. That was just on the side.

Cilantro Lime Hummus
1 can of chickpeas, drained and rinsed
1/2 cup plain fat free yogurt
The juice of one lime
1 clove garlic
1 Tbsp olive oil
1/4 tsp dried cilantro
1/8 tsp dried cumin

Directions:
1. Place all ingredients in a blender or food processor and blend until reached desired consistency.
2. Enjoy on salads, sandwiches, with vegetables, or crackers. The possibilities are really endless.

We enjoyed our hummus on salads! It was such a great flavor combo we will definitely be making this again soon! Who knew making your own hummus could be so easy! We didn’t even need to follow a recipe!
