And we are even more excited that it’s Wednesday!
Why is that?

Because it’s time to link up with Peas and Crayons for What We Ate Wednesday!

Today would be classified in our book as a good food day. But lately, they have all been good food days! Because why eat something if you aren’t going to enjoy EVERY bite of it. We’re clearly enjoying ours.

Warmer weather means overnight oats for breakfast! Sometimes in the summer when we have hot oatmeal we find ourselves sweating because we are just way too hot! Not a good start to the day. So, since the weather is getting much warmer we have been reintroducing overnight oats into our lives. It’s rocking. And breakfast was the perfect combination of almond milk, chai seeds, rolled oats, banana, cinnamon, and buckwheat groats. Plus something new: peanut butter pumpkin icing on top. That’s pretty fancy for a Tuesday morning breakfast. But you know we don’t mess around when it comes to breakfast.

Since we both have started working at our new jobs life has gotten a little more hectic. Kayla worked today from 12-6pm and Devon had to go into work at 5pm until close. Talk about opposite schedules. We did get to enjoy lunch together before Kayla went into work. Baby spinach, avocado, a large egg, baby carrots, multigrain bread, sunflower seeds, and sun-dried tomato dressing.

Snacks were the same for both of us but consumed at different times of the day! We wish you could just snap your fingers and have a perfectly made smoothie right before your eyes. But unfortunately, it doesn’t work like that. But hey, if someone wants to make a lot of money, they should start thinking of a way for this to come true! Who wants 24/7 access to smoothies!? WE DO! But for now, it looks like 11:30pm is a little late for smoothie making. So, smoothie in a bowl before work for Devon.

Dinner was prepared in advance but nevertheless fantastic. Salmon cakes, steamed asparagus, and red potatoes seasoned with rosemary and thyme. Easily re-heated for whenever dinner was served.

Late night hunger was instantly curved by one of these babies. Our stock is running low. We are in love with Lara bars. Does anyone else share this obsession with us? What is your favorite kind? Tonight’s flavor: Apple Pie.
