What We Ate Week 18

Wow, we cannot believe today is the first day of May! Where has the time gone? Our last day of classes for spring semester is today. The next time we sit in classes we will be JUNIORS. JUNIORS IN COLLEGE. OMG. (We just cannot believe we are already half way done with our undergraduate degrees).

Ready to see what we munched on yesterday? It was a good food day, we promise. Especially since we went grocery shopping yesterday! Our fridge and pantry are packed with tons of healthy food to kick off our summer.

what i ate

Up first on this early morning: a big bowl of our famous whipped banana oats. We topped this morning’s creation with hemp seeds, blueberries, kiwi, toasted coconut, and better than peanut butter.

Enjoyed with a hot cup of coffee mixed with Truvia and sugar free peppermint creamer. Our bottle is still going strong!

We always enjoy the food party Peas and Crayons throws on Wednesdays. Just so you know, it’s never too late to join in on the fun. Link up next week to start celebrating all the wonderful food you’re enjoying in your life!

In between our busy schedules of finishing up the spring semester and working, we love having a little time to enjoy a meal together before one of us has to go into work or school. Instead of taking these moments for granted, we have recently began banning all electronic devices during meal times! Have you ever noticed how you are so involved in your phone that you don’t even remember enjoying your meal? Before you know it your plate is empty! Instead, you should try to set your phone down during meals and slowly take bites of your food instead, savoring each bite.

It’s much more important to listen to your body instead of checking your twitter account for favorites or new updates.

After a crazy morning filled with finals, presentations, and grocery shopping we did not eat lunch until around 2:00 pm. We were definitely STARVING by the time we sat down for lunch. We did have an apple as a snack to hold us over around 1:00 pm because lets be honest neither of us are very nice when we are hungry!

Lunch was quickly prepared and involved some of our grocery store finds! A sandwich on whole grain bread with tomato slices, avocado, mixed greens, and Jenny O sun dried tomato smoked turkey breast (this stuff is awesome BTW).

Notice our mom’s beautiful arm in the background? We were so excited to spend the majority of our day with her yesterday. We always have so much fun together no matter what we are doing. Yesterday we also found a lettuce place at our grocery store for $4.95. We are definitely loving all this fresh produce available to use right outside our front door!

We both ended up working last night so dinner was prepared and eaten on break. We had a mixed green salad topped with kidney beans, carrots, avocado, broccoli, flax seeds, a baked sweet potato and balsamic vinaigrette! We get our groceries form a local mennonite store and yesterday we happened to score sweet potatoes for .10/lb. Let’s just say we may or may not have bought our weight in sweet potatoes.

Finally after a crazy long day we finished the night with another version of Eating Bird Food’s cottage cheese snack. This combination involved Breakstone’s peach cobbler cottage cheese, strawberries, almond milk, cinnamon, and Nature Path pumpkin raisin crunch cereal. We are seriously obsessed with the combination of almond milk and cottage cheese topped with something crunchy. If you have not tried this combination yet, you should!

    Do you guys always eat the same things? What does one of you like that the other doesn’t? It would be interesting to see a comparison post!
    I never use electronics whilst eating, it is too distracting!

      We usually eat the same things just because we have pretty similar taste buds! Occasionally we will eat different things but it just happens to never be when we we’re blogging about our eats that day! Next semester one of us will be abroad though so you will have to look for post comparing our eats then! šŸ™‚

    Yum! Love those Luna bars. I personally enjoy scrolling through my phone while eating. It actually relaxes me? Is that a good thing? Haha. Happy WIAW!

      Haha that is totally okay… Everyone is different and if it’s relaxing for you then you definitely deserve to be relaxed while eating šŸ™‚ happy WIAW to you too!

    Ugh, I NEED to avoid all tech devices but eating solo can be a bummer, so I rely on something to take my mind off of things
