WIAW [2/5/14]

After a busy last week it was quite nice to have a snow day on Monday.

A full day of catching up on work, staying warm inside, and tons of time to meal prep for the next few days!

Yesterday we made a big batch of chili in the crockpot, a large freekeh, chickpea and roasted vegetable salad for lunches, and homemade whole wheat banana bread! The smells coming from our kitchen were to die for.

Here are our eats from Tuesday, enjoy!

We started off the day with a big bowl of oat bran, enjoyed leftover butternut squash and black bean enchiladas on mixed green salads for lunch, and for dinner we had some chili topped with greek yogurt and avocado. A smoothie held us over in the afternoon and we ended the day with a mug of plain greek yogurt topped with a crumbled piece of banana bread.

We just received an e-mail that our classes today are cancelled again due to the snow and freezing rain! Cheers to another snow day! This week is turning out to be quite fabulous. Make sure to check out what everyone else is eating lately on this snowy Wednesday over at Peas and Crayons. 

Weekend Shots [1/27/14]

Happy Monday everyone! We spent this past weekend in Virginia at a leadership conference for Phi Sigma Sigma. Both of us are on executive board for our sororities’ chapter at Lebanon Valley College so we spent the weekend soaking up lots of great ideas and leadership skills to bring back to the rest of our sisters.

Road tripping with 4 of our other sorority sisters was such a fun way to spend the weekend! We were not sure what to expect food wise because we had no control over our meals for the weekend at the conference. We made sure to pack tons of healthy snacks including fresh fruit, granola bars, and a homemade loaf of 100% honey whole wheat bread.

Before getting to the hotel on Friday evening we stopped to grab chipotle to go for dinner. Best way to start off the weekend. We got huge salads with their newest menu item, Sofritas! It’s tofu infused with spicy flavors! Has else anyone ever tried this new menu item before?

The breakfast selection was rough despite the abundance of bananas and apples. They only had pastries and plain mini regular bagels. Good thing we brought homemade bread and peanut butter to fill in the gaps at breakfast.

The lunch spread on Saturday was pretty decent thanks to a buffet included fresh fruit and a make your own sandwich bar. We made friends with the servers who brought us our own plate of fruit!

There were water stations all over the hotel for the conference weekend. We also tried orange infused water for the first time, amazing. Definitely planning to recreate something like this at home!

The hotel was freezing in the lobby, so we huddled together to keep warm in between sessions.

It is absolutely wonderful to be sisters and executive board members. We love being able to both hold a leadership position in a Phi Sigma Sigma!

Saturday night was a Monte Carlo themed dinner and auction event for the Phi Sigma Foundation. There was bingo, auctions, t-shirt bidding, a photo booth, and more! We had so much fun! Devon even won a free t-shirt during bingo!

Here’s all of our sisters before dinner! We were always 10-15 minutes early thanks to our hatred of being late. We always got excellent seats at the sessions and meals. Being on time has its perks.

Dinner Saturday night started with a mixed greens salad, and ended with the main course that involved chicken, asparagus, carrots, mashed red potatoes, and sun-dried tomatoes. Not bad at all!

After the conference ended on Sunday around noon, we map quested the local town to find a Panera close by! We quickly enjoyed a chicken hummus bowl off of their hidden menu (which is officially not hidden anymore) with a side of wheat baguette. The bread does not come with the salad, but it is totally worth it anyways.

After getting home late in the afternoon Sunday, we had only a few minutes to spare before we headed to campus for our sorority meeting! It was such a busy weekend, and we decided that school work just was not going to get completed until Monday. Thankfully, we both have an 8am and then a huge gap in our schedules for homework and playing catchup.

Before bed, we finished working on important things on our to-do lists and saved a little time for relaxation! We are planning on attending our 5:40 AM pump class tomorrow, so knew we needed to head to bed pretty early. 10:30 and our lights are out!

The Perfect Coffee Smoothie

Sometimes you just need an afternoon pick me up. This can sometimes be found in the form of a granola bar. Or maybe in the form of dark chocolate. Or  maybe a in a coffee smoothie. Yup, definitely a coffee smoothie. So today, I say you make your afternoon pick me up this coffee smoothie. It is a really energizing smoothie that will take you approximately 60 seconds to make. The combination of banana, coffee, and cinnamon blend perfectly into a thick smoothie that you can enjoy with a spoon.

Coffee Banana Smoothie
adapted from this genius recipe
Serves 1

Ingredients:
1 large frozen banana 
5 frozen coffee ice cubes 
5 frozen soy milk ice cubes
2-3 water ice cubes
1/2 cup of soy milk 
a large pinch of cinnamon

Directions:
1. Place all the ingredients in the blender, blend, and enjoy!

Before you head into your kitchen to make this smoothie, you have to freeze both coffee and soy milk into ice cubes in advance. You can choose any flavor of coffee that you would like! We used Folgers original, but I think next time we may try to make it with our toasted coconut flavor.

Don’t forget to top it with something amazing! We suggest nuts, granola, or a handful of nature’s path cereal!

WIAW [1/22/14]

We love Wednesdays. Especially Wednesdays after snow days. Snow days that leave us stranded at home curled up by the fire with Grey’s and a heavy pour of sweet red in our hand. Here’s a picture recap of yesterday’s eats. It was a good food day indeed.

After coffee we started the day with a banana dough boy smoothie. Kath sure knows how to make a mean smoothie. 20140121-185752.jpg

Snacky lunch. Tuna, avocado and greek yogurt dip with Late July tortilla chips, red pepper slices, cucumber slices and an apple on the side. Lunch is just so much more fun when it involves dunking chips.

Late afternoon we enjoyed a small yogurt parfait filled with Chobani, blackberries, and granola. If we must say it was a pretty tasty combination.

Dinner was whipped up in a matter of minutes thanks to some meal planning earlier in the week. Already cooked bulgur wheat, grape tomatoes, chicken, melted mozzarella, roasted brussels sprouts and homemade lemon tahani dressing over a big bowl of mixed greens.

It was a well enjoyed snow day that may or may not have ended with a small bowl of blueberry oatmeal with a blob of almond butter on top. Let’s be honest, a day without nut butter is a pretty sad day. wiaw

WIAW Winter Break Edition

Hey guys, happy Wednesday! We hope you all are having a fabulous week! Can you believe there are only 6 days until Christmas? Yeah, we can’t either. All our Christmas shopping is officially done and our gifts are wrapped and already waiting under the tree!

If you ask us what our favorite part about winter break is, we definitely would say it is cooking and getting creative in the kitchen. During the semester our busy schedules make it hard to be creative and try new recipes but our schedules are wide open right now and we’re definitely taking advantage!

It’s Wednesday so today we are going to share with you all what we’ve been eating lately! Don’t forget to head on over to Peas and Crayons to check out what everyone else is munching on lately. We love Wednesday’s, and WIAW is definitely our favorite blog link up ever.

We were definitely creative yesterday, especially with breakfast.

A banana split for breakfast? Don’t mind if we do!

Overnight oats poured over a sliced banana topped with drippy almond butter, homemade quinoa granola, and shredded coconut. Best idea ever.

Lunch was an arugula salad paired with a fresh and juicy apple.

We made a big salad for lunches this week based off of Kath’s beet salad recipe. We tossed arugula with roasted cinnamon and cayenne sweet potatoes, chickpeas, pomegranate arils, bulgur wheat, and sunflower seeds.

Around 4pm our stomachs were growling and we had peanut butter cookie Lara bars to hold us over until dinner!

We usually are not big pasta fans but we decided to give it a try and let’s just say we may be bringing pasta back into our dinner rotations. We always feel that a serving of pasta isn’t very filling but we bulked it up with kale, cauliflower, grape tomatoes, and chicken.

We’re hooking on watching all 9 seasons of Grey’s Anatomy during winter break. We are currently on Season 4 and cannot stop watching!!Greys

In between episodes we snacked on siggi’s plain yogurt (love the ingredients list btw, just skim milk), a 1/2 of a crumbled trader joe’s blueberry bran muffin, banana slices and pomegranate arils.

And maybe one or two spoonfuls of this baby. Our mom brought us back a jar from her weekend business trip to Boston. She’s the best!

Yesterday was definitely a good food day. We hope these photos inspire you all to add lots of vegetables to your next pasta dish, to go get in your car and buy those trader joe bran muffins, and to possibly spark your interest in becoming as obsessed with Grey’s Anatomy as we are.
