We have come to realize over the past few years that life is just way too short to eat crappy food.

Here is a recap of yesterday’s eats! ‘Twas a good food day indeed. No crap food in sight.

We started off Tuesday with a throwback breakfast. KERF whipped banana oats with cottage cheese mixed in. We topped our oatmeal with toasted coconut and coconut peanut butter. It was definitely a rocking combination and a fabulous way to start off the day.

Lunch was some of our lentil salad we prepped on Sunday afternoon.

Our afternoon snack was consumed between classes and went unpictured. We have also come to the conclusion that we could eat a banana with peanut butter every single day and not get sick of it. Anyone else with us? .

Meal Prep 101

If you took a look at our planners you would probably be a little overwhelmed. We are busy girls. Between our 5:30 am workouts on Monday, Wednesday, Thursday, and Friday, our 8 am classes every day, and meetings for our sorority on Tuesday, Thursday, and Sunday evenings, we barely find time to sit down and relax from early Monday morning to Friday afternoon.

We both try to fit in as much schoolwork as we can between Monday morning and Friday afternoon so we can spend the weekend relaxing, catching up with friends and family, cooking, and simply just enjoying our morning cup of coffee without having to glance at the clock every five seconds.

One thing we have found to be extremely helpful for us is to prep a bunch of food one day to help us get through the busy week. There is nothing more convenient than being able to have lunch on the table in less than 10
minutes on a busy afternoon thanks to meal prep. Plus, a steaming bowl of homemade soup and fresh corn bread for lunch sure does make any crazy busy day 100 times better.

If you feel like you are always rushing around during the week and spending way too much time cooking or even resulting to unhealthy options just because they are convenient in a hurry maybe you should consider doing some weekly food prep.

Although some weeks we have more time than others we usually do some type of meal prep on Sunday. This is how we prepped for the upcoming week.

On Sunday afternoon in less than two hours we made a Moroccan and chickpea soup, a lentil salad, and maple pumpkin corn bread from Nutritious Kitchen.

These three items will come in handy for quick lunches and dinners on days this week we really do not have time to spend cooking. Although prepping food for the week consumed a small portion of our Sunday, we think it is worth it in exchange for the less amount of time spent later.

A couple of our favorite blogs got us hooked on the convenience of meal prepping. Our favorite inspiration by far is definitely, the Lean Green Bean. Lindsay is awesome and preps just about everything she will need for the week ahead on Saturday or Sunday!

We hope you consider giving  meal prep a chance especially if you are a busy college student, a mom with a full time job, or even a frustrated person who is trying to eat healthy but just cannot find the time. If you are new to this whole food prep thing you may just be surprised how easy it is to put together breakfast in the morning when your strawberries are already cut and your yogurt is already measured out.

Another weekend in the books. We spent this past weekend soaking up as much family and friend time as possible. Between a Pho dinner date on Friday night with a sweet new friend, a Chipotle and Corona girls night on Saturday, and homemade pizza and craft beer on Sunday with our mom and Lou it was definitely a marvelous weekend.

WIAW [2/5/14]

After a busy last week it was quite nice to have a snow day on Monday.

A full day of catching up on work, staying warm inside, and tons of time to meal prep for the next few days!

Yesterday we made a big batch of chili in the crockpot, a large freekeh, chickpea and roasted vegetable salad for lunches, and homemade whole wheat banana bread! The smells coming from our kitchen were to die for.

Here are our eats from Tuesday, enjoy!

We started off the day with a big bowl of oat bran, enjoyed leftover butternut squash and black bean enchiladas on mixed green salads for lunch, and for dinner we had some chili topped with greek yogurt and avocado. A smoothie held us over in the afternoon and we ended the day with a mug of plain greek yogurt topped with a crumbled piece of banana bread.

We just received an e-mail that our classes today are cancelled again due to the snow and freezing rain! Cheers to another snow day! This week is turning out to be quite fabulous. Make sure to check out what everyone else is eating lately on this snowy Wednesday over at Peas and Crayons. 

Weekend Shots [2/3/14]

Somehow it is already February. We are not quite sure how that happened but there is no complaining about it in this household. The start of February means we are one month closer to spring, warmer weather, and running season! These past few weeks have been so cold in Pennsylvania that we have not been able to get an outside run in at all! We know the treadmill is always an option but let’s be honest, nothing compares to running outside. Whose with us?

This past week was jam-packed for us! It was formal rush for our sorority and there were lots of late nights involved. Late nights and early mornings make for some sleepy sisters. We somehow managed to make it through the week with lots of coffee and finally caught up on some much needed sleep this weekend. Weekend Shots [1/27/14]

Happy Monday everyone! We spent this past weekend in Virginia at a leadership conference for Phi Sigma Sigma. Both of us are on executive board for our sororities’ chapter at Lebanon Valley College so we spent the weekend soaking up lots of great ideas and leadership skills to bring back to the rest of our sisters.

Road tripping with 4 of our other sorority sisters was such a fun way to spend the weekend! We were not sure what to expect food wise because we had no control over our meals for the weekend at the conference. We made sure to pack tons of healthy snacks including fresh fruit, granola bars, and a homemade loaf of 100% honey whole wheat bread.

Before getting to the hotel on Friday evening we stopped to grab chipotle to go for dinner. Best way to start off the weekend. We got huge salads with their newest menu item, Sofritas! It’s tofu infused with spicy flavors! Has else anyone ever tried this new menu item before?

The breakfast selection was rough despite the abundance of bananas and apples. They only had pastries and plain mini regular bagels. Good thing we brought homemade bread and peanut butter to fill in the gaps at breakfast.

The lunch spread on Saturday was pretty decent thanks to a buffet included fresh fruit and a make your own sandwich bar. We made friends with the servers who brought us our own plate of fruit!

There were water stations all over the hotel for the conference weekend. We also tried orange infused water for the first time, amazing. Definitely planning to recreate something like this at home!

The hotel was freezing in the lobby, so we huddled together to keep warm in between sessions.

It is absolutely wonderful to be sisters and executive board members. We love being able to both hold a leadership position in a Phi Sigma Sigma!

Saturday night was a Monte Carlo themed dinner and auction event for the Phi Sigma Foundation. There was bingo, auctions, t-shirt bidding, a photo booth, and more! We had so much fun! Devon even won a free t-shirt during bingo!

Here’s all of our sisters before dinner! We were always 10-15 minutes early thanks to our hatred of being late. We always got excellent seats at the sessions and meals. Being on time has its perks.

Dinner Saturday night started with a mixed greens salad, and ended with the main course that involved chicken, asparagus, carrots, mashed red potatoes, and sun-dried tomatoes. Not bad at all!

After the conference ended on Sunday around noon, we map quested the local town to find a Panera close by! We quickly enjoyed a chicken hummus bowl off of their hidden menu (which is officially not hidden anymore) with a side of wheat baguette. The bread does not come with the salad, but it is totally worth it anyways.

After getting home late in the afternoon Sunday, we had only a few minutes to spare before we headed to campus for our sorority meeting! It was such a busy weekend, and we decided that school work just was not going to get completed until Monday. Thankfully, we both have an 8am and then a huge gap in our schedules for homework and playing catchup.

Before bed, we finished working on important things on our to-do lists and saved a little time for relaxation! We are planning on attending our 5:40 AM pump class tomorrow, so knew we needed to head to bed pretty early. 10:30 and our lights are out!

Friday Favorites

1. Polar Watch

We have had our polar watches for over six months now but have not had the chance to blog about them yet! We love that they monitor our heart rates, keep track of our calorie burn, and time our workouts. It is so helpful to watch your targeted heart rate go up and down during HITT workouts, body pump classes, and runs around the neighborhood. If you are interested in monitoring your own heart rate and exercise when you work out, then we suggest you purchase one of your own! The only thing we wish our Polar watch had was a built in GPS feature, to track miles when completing our long distance runs. But thankfully we both have Iphone apps that can keep track of the mileage for us.

2. Naked 2 Palette 

Neutral eye colors are kind of our thing. Although we love fun and bold eye colors, we tend to lean towards wearing basic colors everyday. This is why we absolutely love our Naked 2 palette so much. Naked has three different versions of these eye shadow combinations and although we only have the 2, we have heard great things about the first and most recent palettes. Our mom purchased our palette’s at Sephora last year around the holidays. We know they can also be found at many department stores, Ulta, and online!

3. Toasted Coconut Coffee 

After a few weeks of drinking Folgers coffee we have come to the conclusion that flavored coffee is just so much better. We have been debating for a while whether or not buying flavored coffee was worth the increase price tag because we can buy a huge container of Folgers at Costco for around $10. After picking up a $5 bag of toasted coconut coffee at Marshalls, there is no going back. We can justify it by thinking about how much it would cost to get a cup of flavored Dunkin’ each day before class. Coconut coffee > buying coffee on the go.

4. Fitness Blender

One of the best things about blogging is finding out what other bloggers are doing and love. A few weeks ago we were scrolling through one of our favorite blogs (we can’t remember whose) and came across a link to Fitness Blender. We have been using it so much lately, especially for early morning workouts when the roads are bad and we just don’t feel like driving to the gym. The website has 100’s of workout videos ranging from yoga, HITT videos, plain old cardio videos, ab workouts, warm up, cool downs, and so much more. We are not exaggerating when we say we LOVE this website and have tried over 10 different workout videos and loved them all. Next time you feel like changing up your workout routine make sure to check it out!
