Weekend Shots [2/10/14]

Another weekend in the books. We spent this past weekend soaking up as much family and friend time as possible. Between a Pho dinner date on Friday night with a sweet new friend, a Chipotle and Corona girls night on Saturday, and homemade pizza and craft beer on Sunday with our mom and Lou it was definitely a marvelous weekend.

Friday Favorites

Happy Friday everyone! We decided to do another post on some of our favorite things lately. If you like this post, make sure to check out some of our previous Friday favorite posts.

1. Les Mills Body Pump

Now that we’re both living in the same country again we’ve started back up going to our body pump class at 5:40 am on Monday, Wednesday and Friday mornings and we could not be happier. There is really no better feeling than having your workout for the day accomplished by 6:30 am.

2. Bananas and Almond Butter

If we ever need a quick and easy snack combination this is our go-to. More often than not we find ourselves craving this amazing duo, especially with almond butter or cinnamon raisin swirl peanut butter.

3. SinfulColors professional nail polish in nirvana.

We think that this color is the perfect shade of gray. Not to light, not to dark, just right. You can score this nail polish along with many other fabulous colors at Target for less than $2.

4. Online Deals.

We are completely done with our christmas shopping thanks to amazing deals we scored online. We love shopping but it’s definitely nice to beat the crazy crowds that are out around this time of the year.

5. Fage greek yogurt.

We are loving on Fage lately. We love that their plain greek yogurt is super thick and makes for the perfect blank canvas for breakfast, lunch, or a snack.

6. French toast flavored coffee.

We scored a bag on the clearance rack at TJ Maxx the other day for $3. We were so in love with the flavor combination that we flew through the bag in less than a week. Sadly, this is all that’s left.

Coconut Date Energy Bites

As of this morning, we have successfully competed our first full week of Body Pump classes! There is no greater feeling than getting in an awesome work out before most people have even rolled out of bed.

Body pump is a barbell class that sculpts and tones your entire body! It focuses on low weight loads with high repetition movements to help you burn fat, gain strength, and quickly produce lean body muscles.

We are loving this class and if you think it seems like something you’d enjoy too, you should check out this website to see if there is a class taught in your area!

Although 5:30 am is a little too early for our typical big breakfast we still like to at least put something nutritious in our body before our workout. Late Sunday night we were brainstorming what we could make to grab quick in the morning before our first Body Pump class. With a container of dates that needed to be used and inspiration from our favorite food bloggers Kylie from immaeatthat and Emily from the Daily Garnish these were created.

Coconut Date Energy Bites (makes 23 tablespoon sized bites)

Ingredients:

1/4 cup of almonds
1 cup of rolled oats
10 dates, pitted
1 tablespoon of hemp seeds
2 tablespoons of ground flax
1 teaspoon of vanilla extract
1/4 cup of textured vegetable protein (TVP)
8 tablespoons of unsweetened shredded coconut (reserve 2 tablespoons for rolling)
1/2 teaspoon of salt
1 teaspoon of cinnamon
1/4 cup of water

Directions:

1. Pit your dates and chop them into bite sized pieces.
2. Combine all ingredients in blender or food processor, excluding water and 2 tablespoons of shredded coconut. Allow the mixture to blend for a minute or so to break down the ingredients.
3. Once the mixture is slightly dry and crumbly slowly add in 1/4 cup of water and continue to mix or blend together until the mixture becomes sticky and wet.
4. Scoop out tablespoon sized portions and roll them into balls.
5. Roll balls in shredded coconut and place in refrigerator or freezer.

These bites are super easy to make and you can basically substitute any ingredients for ones you have on hand. Any type of nut, peanut butter, or dried fruit would be a great addition to these energy bites. These are perfect to grab on the go and average about 65 calories per bite with almost 2 grams of protein! We usually grab 2-3 bites before our work out! These are definitely a new staple in our house.

Our summer is also extra marvelous thanks to finding this favorite Yoplait frozen yogurt flavor at our local Walmart.

However, the most marvelous find of them all is definitely this jar of Artisana Raw Coconut Butter we scored from TJ Maxx.

Starting today at 5:50am, we are taking up a new fitness class at our College! We know that the timing sounds a little crazy…but we are excited to start working out again. Our personal fitness goals for this summer are to gain muscle, get stronger, and be able to run longer distances again. We are hoping to eventually run a 5k when Kayla gets back from Australia! Although a 5k is not an extremely long distance, it is a start on our ultimate goal of someday running a half marathon!
