The Perfect Coffee Smoothie

Sometimes you just need an afternoon pick me up. This can sometimes be found in the form of a granola bar. Or maybe in the form of dark chocolate. Or  maybe a in a coffee smoothie. Yup, definitely a coffee smoothie. So today, I say you make your afternoon pick me up this coffee smoothie. It is a really energizing smoothie that will take you approximately 60 seconds to make. The combination of banana, coffee, and cinnamon blend perfectly into a thick smoothie that you can enjoy with a spoon.

Coffee Banana Smoothie

Serves 1

1 large frozen banana 
5 frozen coffee ice cubes 
5 frozen soy milk ice cubes
2-3 water ice cubes
1/2 cup of soy milk 
a large pinch of cinnamon

1. Place all the ingredients in the blender, blend, and enjoy!

Before you head into your kitchen to make this smoothie, you have to freeze both coffee and soy milk into ice cubes in advance. You can choose any flavor of coffee that you would like! We used Folgers original, but I think next time we may try to make it with our toasted coconut flavor.

Don’t forget to top it with something amazing! We suggest nuts, granola, or a handful of nature’s path cereal!


Pumpkin Spiced Latte

Nothing screams fall more than a Starbucks Pumpkin Spiced Latte. But lets be honest, on a lazy Sunday afternoon when the craving for a warm pumpkin coffee drink comes along, the last thing you want to do is get in your car and drive to the nearest Starbucks. Thats why we’ve created our own pumpkin spiced latte’s at home. Now you can enjoy these in your lazy sunday lounge wear, in your slippers, and in the comfort of your warm and cozy home just like we did. These are our own take on Starbucks Pumpkin Spice Lattes. 


1 1/2 cups skim milk
1-2 shots of espresso 
1 1/2 tablespoons of canned pumpkin
sweetener to taste (we used 2 packets of equal)
1/2 tsp. pumpkin pie spice
1/2 tsp. cinnamon 
1/2 tsp. vanilla extract 


1. Combine the milk, spices, pumpkin, sweetener, and vanilla in a small sauce pan and heat over low heat stirring occasionally. When the liquid reaches a simmer you can remove it from the heat and pour into a mug.

2. Next, it’s time to make your foam topping. Whip together another tsp of pumpkin, and another 1/4 cup of skim milk with a frothier. Once you’ve reached the foamy consistency desired, top your milk mixture, and add desired amount of expresso. Finally, top this amazing goodness with a pinch of cinnamon and enjoy!


Morning Routine: Apple Cinnamon Oatmeal Style

Nothing is quite as good in the morning than a large bowl of oatmeal. This morning we decided to create one using fresh apples we picked up this weekend at the local farmers market.

1/2 cup old fashioned oats or quick oats
1 cup water
1 packet Truvia
1 teaspoon cinnamon
1/2 Fuji apple; cut into chunks
1 teaspoon wheat germ
1/4 cup light vanilla soy milk
1 tablespoon no sugar added applesauce
1 teaspoon flaxseed


1. In a large bowl combine oatmeal, wheat germ, cinnamon and Splenda packet with the water and microwave for 3-3:30 minutes.

2. Once the oatmeal is cooked (length varies depending on microwave) you add the vanilla soy milk, apple chunks, flaxseed, and applesauce to the top. To finish, sprinkle with a dash of cinnamon!

Nutritional Info: Less than 300 calories for all of that healthy goodness! How could anyone resist this in the morning?

This oatmeal goes well paired with our pumpkin spice flavored coffee. We can’t get enough of this wonderful fall flavor that’s beginning to be spotted everywhere! Enjoy 🙂
