WIAW Post-Vacation

It is definitely an understatement when we say it is a little difficult to get back into the swing of things after spending seven days away on vacation. After being in 70-80 degree temperatures, 30 degree temperatures were no longer considered “warmer days”. However, hopefully we will see some warmer days ahead! Each day we are counting down the days left until spring! Eight to go! We cannot wait.

Although it was wonderful to have someone cook and serve us dinner for seven whole days, we would be lying if we said we did not miss cooking in our own kitchen. We could not wait to get home and purchase some of our favorite basics we missed during our trip! Heres what was on our list.

1. Plain Greek Yogurt
2. Mixed Greens
3. Hummus
4. Oversized Carrots
5. Sweet Potatoes 
6.  Flavored Coffee
7. Kale
8. Strawberries

We were planning to stop at a Costco on the way home, but instead we passed a Trader Joes so of course we just had to stop! Thankfully our mom picked up a few things at Costco for us anyways, but we were also able to get our favorite hummus, pink lady apples, a few jars of our favorite unsalted peanut butter, and trail mix! What is your favorite thing to purchase from Trader Joes?

We used these groceries to get us through the next few days until we are onto our next adventure. We definitely missed our favorite foods during our Spring Break getaway, but enjoyed all of our time unplugged, relaxed, and soaking up the sun! Can you tell we got a little burnt?

WIAW [2/12/14]

We have come to realize over the past few years that life is just way too short to eat crappy food.

Here is a recap of yesterday’s eats! ‘Twas a good food day indeed. No crap food in sight.

We started off Tuesday with a throwback breakfast. KERF whipped banana oats with cottage cheese mixed in. We topped our oatmeal with toasted coconut and coconut peanut butter. It was definitely a rocking combination and a fabulous way to start off the day.

Lunch was some of our lentil salad we prepped on Sunday afternoon.

Our afternoon snack was consumed between classes and went unpictured. We have also come to the conclusion that we could eat a banana with peanut butter every single day and not get sick of it. Anyone else with us? . 

 

Dinner was a comforting bowl of homemade soup.

Weekend Shots [2/3/14]

Somehow it is already February. We are not quite sure how that happened but there is no complaining about it in this household. The start of February means we are one month closer to spring, warmer weather, and running season! These past few weeks have been so cold in Pennsylvania that we have not been able to get an outside run in at all! We know the treadmill is always an option but let’s be honest, nothing compares to running outside. Whose with us?

This past week was jam-packed for us! It was formal rush for our sorority and there were lots of late nights involved. Late nights and early mornings make for some sleepy sisters. We somehow managed to make it through the week with lots of coffee and finally caught up on some much needed sleep this weekend. Since we missed out on a WIAW post last week here are some snapshots from our past week and weekend. We hope you enjoy!

We ended the weekend with a lazy Sunday morning breakfast for two. Happy Monday!

Happy New Year!

Happy New Year! Last night we rang in the new year with a good friend. Our night was filled with tofu ricotta lasagna [to die for, btw] wine, and champagne as the ball dropped.

This morning we woke up around 8:45 and got in a quick 30 minute run around the neighborhood to kick off 2014 on the right note!

After showering we made our first breakfast of 2014. A greek yogurt parfait filled with plain 2% Fage, diced red delicious apples, homemade granola, and peanut butter!

Today we plan on having a lazy day filled with lots and lots of Grey’s anatomy.

Another List

There is only one good thing about being separated for 5 long months.

That only one good thing happens to be  our “the moment we are reunited to-do” list.

This list is fabulous and we may just happen to add to it every single day.

Highlights include making these.

and this

And eating almost everything out of peanut butter bowls.

Not to mention going to Wegmans to try their Marathon bread.

And staying up late making our own version of C.Ville Crunch Granola.

We also want to take a road trip, stopping at every location we deem interesting along the way.

Adding to our list makes the next 99 days almost not seem that bad, almost.

Cashew Date Balls

Remember those Coconut Date Energy Bites we made a few weeks back?
They are absolutely perfect to grab before our 5:40 AM muscle pump class for a much needed burst of fuel in the morning.

Especially because at that hour we are not awake enough to grab anything else.

So after eating the last 2 bites we had in the freezer we knew we needed to make another batch ASAP.

So we grabbed our blender and threw in some ingredients inspired by one of our favorite Lara bar flavor, Cashew Cookie. We love mixing around different ingredients to see how the texture and taste is affected.

These date balls may be just as good, if not better, than our first batch.

Cashew Date Balls (Makes 18 tablespoon sized bites)

Ingredients:
2 tablespoons of roasted, unsalted Cashews
1 cup of Rolled Oats
1 teaspoon of Vanilla Extract
3 tablespoons of Hemp Seeds
1/4 cup of Textured Vegetable Protein (optional)
1/4 teaspoon of sea salt
2 tablespoons of Natural Peanut Butter
10 Pitted Dates

Directions:
1. Pit your dates and chop them into bite sized pieces.
2. Combine all ingredients in blender or food processor, excluding water. Allow the mixture to blend for a minute or so to break down the ingredients.
3. Once the mixture is slightly dry and crumbly slowly add in 1/4 cup of water and continue to mix or blend together until the mixture becomes sticky and wet.
4. Scoop out tablespoon sized portions and roll them into balls.
5. Store in refrigerator or freezer.

To thaw date balls remove from freezer and microwave on high for 10 seconds.

WIAW Blueberry Edition

Happy Wednesday! We are pretty happy it’s already Wednesday considering we have fun plans for today! We both have off so we filled our day full of fun activities including 5:50 am Muscle Pump, cleaning the house (okay not so fun but much needed), a mother-daughter-grandma lunch date at one of our favorite local restaurants, and an afternoon poolside.

Thanks to Jenn for hosting another fabulous WIAW Wednesday. This month’s theme is sensible snacking and lately we’ve been snacking on tons of fresh fruit, vegetables with hummus, smoothies, Berry Blast Simply Real Pro Bars, cottage cheese, and cashew energy bites (recipe coming soon!).

On Sunday we picked up a huge carton of blueberries at Cosco so we’ve been adding them to everything lately!

Yesterday Eats

Breakfast
Breakfast cookie topped with plain greek yogurt and blueberries with blueberry coffee on the side.

Whole wheat tortilla topped with 2 scrambled eggs, avocado, tomato slices, mixed greens, salt, pepper, and red pepper flakes. Paired with a big bowl of strawberries, blueberries, cherries, and mango.

Afternoon Snacking
Devon snacked on a Roasted Nut Roll Uber Lara Bar and grapes while at work.

Baked chicken, asparagus, and a side of Blueberry Bulgur Wheat Salad we were just dying to make from yesterday’s post.

Late night snack

Homemade Peanut Butter Chia Seed Pudding (2 tablespoons of chia seeds, 1 tablespoon of PB2, 1 cup of vanilla almond milk, 1/2 sliced banana) topped with homemade Coconut Whip Cream, blueberries, and extra banana slices.
