WIAW [2/5/14]

After a busy last week it was quite nice to have a snow day on Monday.

A full day of catching up on work, staying warm inside, and tons of time to meal prep for the next few days!

Yesterday we made a big batch of chili in the crockpot, a large freekeh, chickpea and roasted vegetable salad for lunches, and homemade whole wheat banana bread! The smells coming from our kitchen were to die for.

Here are our eats from Tuesday, enjoy!

We started off the day with a big bowl of oat bran, enjoyed leftover butternut squash and black bean enchiladas on mixed green salads for lunch, and for dinner we had some chili topped with greek yogurt and avocado. A smoothie held us over in the afternoon and we ended the day with a mug of plain greek yogurt topped with a crumbled piece of banana bread.

We just received an e-mail that our classes today are cancelled again due to the snow and freezing rain! Cheers to another snow day! This week is turning out to be quite fabulous. Make sure to check out what everyone else is eating lately on this snowy Wednesday over at Peas and Crayons. 

A Marvelous Family Road Trip

Happy Monday!

Today we want to share with you a recap of our fabulous 4 day road trip to our Aunt Dawn’s house in the form of pictures we snapped over the past few days.

Surprisingly, our iphones take some pretty marvelous photos.

We started off our road trip Wednesday morning with a peanut butter and jelly smoothie bowl.

We only managed to get five hours of sleep the night before so not far after we left a pit stop at Dunkin’ Donuts was much needed. Blueberry iced coffee for the win.

We arrived at our cousin Katelynn’s house around noon to find this beautiful set up! She is seriously the greatest hostess ever. On our bed was travel sized shampoo and conditioner, a fun TJ Maxx reusable bag, the new allure magazine, gum, and coffee!

After lunch we headed to our Aunt’s house. Check out this Fairy Garden she made for our cousins Katie Scott & Liza. She is so talented!

For dinner on Wednesday we threw together a bunch of stuff. Aren’t these bowls awesome? They have mixed greens, tofu, avocado, yellow peppers, and carrots with Annie’s Gingerly dressing.

July 4th

We are huge fans of July 4th! It may just be because it’s our half birthday…we love birthdays. Especially because we are officially closer to being 21 more and more every day now.

We started off our holiday with a huge bowl of overnight oats.

Our family had a pretty typical fourth of July spread of hamburgers, hot dogs, and picnic salads. Our Aunt Dawn picked up some black bean burgers for us and we enjoyed them with some fresh watermelon and a massaged kale salad!

As well as picking up black bean burgers, our aunt also grabbed a huge tub of plain Chobani greek yogurt. For the past few days we snacked on greek yogurt, fresh fruit, and granola….aka the best summer snack ever!

Friday

Breakfast at our cousins house before we went shopping. Hot oats with cottage cheese, chai seeds, fresh Georgia peaches, Trader Joe’s sun butter and Kind granola.

Friday night we threw together another salad. Leftover massaged kale salad with black beans, pineapple, peppers, and carrots.

Saturday

Why do days off from work seem to go by so much faster? We didn’t want to leave!

After leaving our cousins’s bright and early we enjoyed a yogurt parfait on the go!

Once we got home we unloaded the car, unpacked, and made a quick lunch before we had to work. Tempeh and fresh fig sandwich with grapes and peppers on the side.

A Working WIAW

So far our summer has been fabulous. We’ve been spending our time working, eating, body pumping, and soaking up the sunshine….and engaging in a lot of retail therapy, especially at J.Crew.

Yesterdays eats involved a fun breakfast, a packed lunch, and a speedy but fancy dinner! Hope you enjoy the pictures.

Breakfast

This sandwich has been our go-to lately. Whole grain bread + Sabra Tuscan Herb hummus + carrots + cucumber slices + mixed greens + sprouts = deliciousness

Dinner

We worked semi-late last night so we had a later than usual dinner. When we got home from work we preheated the oven to 400 degree’s and roasted our vegetables for 20 minutes and then added in the salmon for the last 10!

Today we’re off to visit family for a few days. We are looking forward to the time off from work to enjoy good food, great weather, and amazing family. We hope you all have a fabulous July 4th. If you’re blanking on what to make for your holiday party we recommend whipping up a batch of lentil burgers or coconut black bean dip paired with vegetables and whole wheat crackers.

Cashew Date Balls

Remember those Coconut Date Energy Bites we made a few weeks back?
They are absolutely perfect to grab before our 5:40 AM muscle pump class for a much needed burst of fuel in the morning.

Especially because at that hour we are not awake enough to grab anything else.

So after eating the last 2 bites we had in the freezer we knew we needed to make another batch ASAP.

So we grabbed our blender and threw in some ingredients inspired by one of our favorite Lara bar flavor, Cashew Cookie. We love mixing around different ingredients to see how the texture and taste is affected.

These date balls may be just as good, if not better, than our first batch.

Cashew Date Balls (Makes 18 tablespoon sized bites)

Ingredients:
2 tablespoons of roasted, unsalted Cashews
1 cup of Rolled Oats
1 teaspoon of Vanilla Extract
3 tablespoons of Hemp Seeds
1/4 cup of Textured Vegetable Protein (optional)
1/4 teaspoon of sea salt
2 tablespoons of Natural Peanut Butter
10 Pitted Dates

Directions:
1. Pit your dates and chop them into bite sized pieces.
2. Combine all ingredients in blender or food processor, excluding water. Allow the mixture to blend for a minute or so to break down the ingredients.
3. Once the mixture is slightly dry and crumbly slowly add in 1/4 cup of water and continue to mix or blend together until the mixture becomes sticky and wet.
4. Scoop out tablespoon sized portions and roll them into balls.
5. Store in refrigerator or freezer.

To thaw date balls remove from freezer and microwave on high for 10 seconds.

WIAW Blueberry Edition

Happy Wednesday! We are pretty happy it’s already Wednesday considering we have fun plans for today! We both have off so we filled our day full of fun activities including 5:50 am Muscle Pump, cleaning the house (okay not so fun but much needed), a mother-daughter-grandma lunch date at one of our favorite local restaurants, and an afternoon poolside.

Thanks to Jenn for hosting another fabulous WIAW Wednesday. This month’s theme is sensible snacking and lately we’ve been snacking on tons of fresh fruit, vegetables with hummus, smoothies, Berry Blast Simply Real Pro Bars, cottage cheese, and cashew energy bites (recipe coming soon!).

On Sunday we picked up a huge carton of blueberries at Cosco so we’ve been adding them to everything lately!

Yesterday Eats

Breakfast
Breakfast cookie topped with plain greek yogurt and blueberries with blueberry coffee on the side.

Afternoon Snacking
Devon snacked on a Roasted Nut Roll Uber Lara Bar and grapes while at work.

Baked chicken, asparagus, and a side of Blueberry Bulgur Wheat Salad we were just dying to make from yesterday’s post.

Late night snack

Homemade Peanut Butter Chia Seed Pudding (2 tablespoons of chia seeds, 1 tablespoon of PB2, 1 cup of vanilla almond milk, 1/2 sliced banana) topped with homemade Coconut Whip Cream, blueberries, and extra banana slices.

A Lame Weekend

As evident by the title, this weekend has definitely been an uneventful one.

The majority of our weekend was spent working.

But between all those shifts we did have some marvelous eats and marvelous workout sessions.

Saturday morning started with a 10 minute HIT workout followed by a dumbbell weights session, abs, and a short run.

Sunday’s workout was a series of 3 POPSUGAR workout videos (2 arm, 1 abs) followed by another short run.

Now for the food…

Saturday Eats

Breakfast: Overnight oats topped with almond butter, strawberries, and Kaia Foods cinnamon buckwheat and chocolate (for devon) granola.

Lunch: Sandwich with 1 scrambled egg, Trader Joe’s peanut butter and power greens. Paired with baby carrots and a soy yogurt topped with apple slices and Bare Naked Fit triple berry granola.

Afternoon Snacking:
1 light string cheese, 1/2 cup of grapes and 2 of our coconut date energy bites.

Dinner: Power greens topped with roasted sweet potatoes, Kashi whole grain rice pilaf, maple sesame almonds, black eyed peas, and balsamic vinaigrette.

Late night snack: Arrowhead Mills sprouted multigrain flakes and puffed rice cereal mixed together and topped with banana slices and vanilla almond milk.

Sunday Eats

Breakfast: 3/4 cup of cottage cheese topped with 1/2 mango, Ezekiel almond cereal, toasted unsweetened coconut, and almond butter with coffee on the side.

Devon was lucky enough to have the day off so she had a much needed mother daughter day with our mom. Their day involved a much needed stop at Cosco to stock up on some basics including greek yogurt, eggs, truvia, a huge jar of almond butter, blueberries, and multigrain bread!

Dinner: Kath Eats Mole Coconut Burgers on whole wheat buns paired with a side of asparagus and a small glass of Barefoot Sweet Red.

Lately + WIAW

Good morning and happy Wednesday! Thanks to Jenn from Peas and Crayons for hosting another fabulous week of WIAW. We hope you’re all having a wonderful week so far. Our favorite thing about this week is definitely being able to enjoy breakfast and dinner outside. Here’s an update on what’s been happening with us in the past few days. Dinner

Pacific Natural Foods vegetable lentil and roasted red pepper soup. Whenever we buy boxed or canned soup we always make sure to read the ingredients label first. This one is pretty rocking and we topped it with buckwheat groats for an extra crunch.

A baby spinach salad in an almost empty greens container topped with cottage cheese/tuna mixture, carrots, Trader Joe’s chipotle pepper hummus, and paired with a side of Blue Diamond artisan multi-seed gluten free crackers and topped with Annie’s Naturals roasted red pepper salad dressing.

Yesterday we tried making Oh She Glows Super Power Chia Bread and it turned out awesome! We topped the bread with apricot preserves, mixed greens from our garden, and homemade beet burgers we threw together. We paired this combo with carrots and an orange.

Yesterday we also accidentally discovered that a Sweet Frog is coming soon near our house! That definitely made our day 100 times better! Whooooo.

Afternoon snacking. This months WIAW theme is sensible snacking. We were out and about and decided to pick up this snack from a nearby grocery store. Whenever you’re in a rut and need a quick healthy snack think about checking out a nearby grocery store. Usually grocery stores are a lot cheaper than gas stations with a lot more healthy options.
